Pea Puree with Mint and Pecorino Cheese

Makes 1 cup 1 2/3 lb. fresh peas, shelled 3 tbsp extra-virgin olive oil 1 clove garlic, minced 1 1/2-2 tsp fresh mint, chopped Salt & pepper to taste Pecorino cheese, shaved
Place peas in pan. Add enough water to cover. Cook over medium heat 2-3 minutes. Drain; rinse with cold water. Place peas, oil, garlic and mint in food processor. Process until smooth. Season with salt, pepper. Serve on toasts; garnish with pecorino.
